"Parmesan Chicken"
1 pkg. of chicken breast, de-boned
1 jar of spaghetti sauce (26 oz?)
6 tbsp of Parmesan cheese
1 1/2 cup of mozzarella cheese
Preheat oven 375, pour spaghetti sauce into 9 by 13 baking dish, stir in 4 tbsp of Parmesan cheese, add the chicken on top, coat both sides of chicken, cover with foil, bake 30 to 45 minutes. Then uncover, top with remaining Parmesan cheese and add the mozzarella cheese, continue baking 5 minutes or until chicken is cooked through and cheese is melted.
(can be served over pasta)

"Parmesan Chicken"
1 1/2 cup of plain Progress stuffing mix, crush it (or any good stuffing mix?)
3/4 cup of Parmesan cheese
1 1/2 stick of oleo
garlic salt and pepper
boneless chicken breasts
Melt the oleo and coat the chicken breast, and then roll in the remaining mix, bake one hour at 325 in a glass baking dish or 350 in a metal pan.
Patsy Sims, Moberly
(another suggestion from a listener) instead of using oleo, roll in Hellmann's real mayonnaise; and Progresso bread crumbs (they're already crushed) instead of stuffing mix, tastes like Parmesan.
