"Pan Fried Pork Chops, with Red Wine Sauce"
pan fry pork chops, in olive oil, on medium heat or less (cook slow)
add season salt and pepper
remove chops from heat (put tin foil over chops to keep warm) uses a meat thermometer (he looks for 150-160)
slice and onion and put in pan
turn heat up, at least medium to high
tsp minced garlic
1/2 cup each water and red wine (merlot)
leave on heat and reduce down about half
pour over chops when serving

request for homemade dumplings and noodles from scratch
"Homemade Noodles"
combine one beaten egg
1/2 tsp salt
2 tbsp milk, mix this all together
add 1 cup sifted flour (she doesn't sift)
enough flour to roll out, watch so it doesn't stick....roll thin, put enough flour on top to dry (20 minutes or longer....more you make, the longer)
pizza cutter, cut into strips as large as you want
what flour is left, keep, so doesn't stick together
(for her family, uses 6 to 8 eggs...feeds about 10)
same method for dumplings
don't use more than a tsp to drop
(out of Better Homes and Garden, and hints passed down from family)
