"Flaxseed substitute for eggs"
For one egg, simply mix 1 tbsp flaxseed meal with 3 tbsp water in a small bowl and let sit for 2 minutes. Add to a recipe as you would an egg.

"Amish Peanut Brittle"
2 cups granulated sugar
1 cup white Karo syrup
1/2 cup water
1, 8 oz package of raw peanuts
1/4 tsp salt
1 tbsp baking soda
Before you start, have a buttered cookie sheet ready; cook the sugar, water and syrup until the mixture threads, about 10 to 12 minutes; add the salt and peanuts and stir constantly, until the peanuts are toasty brown, about 10 minutes; remove from heat and add baking soda, stir quickly and thoroughly; pour it immediately onto cookie sheet, and let the mixture spread itself; cool and break into pieces.

cook to a thread stage=230 degrees
cook the peanuts, at least 300 degrees, then take off (do not have cookie sheet on a wood table)

"Cranberry Orange Snack Mix"
2 cups oatmeal cereal squares (Quaker)
2 cups corn cereal squares
2 cups miniature pretzels (your choice, size and shape)
1 cup whole almonds (other nuts will work)
1/4 cup butter, melted
1/3 cup thawed orange juice concentrate
3 tbsp brown sugar
1 tsp cinnamon
3/4 tsp ginger
1/4 tsp nutmeg
2/3 cup dried cranberries (add after baked)
Preheat oven to 250. Combine cereals, pretzels and almonds in large bowl. Combine melted butter, orange concentrate, brown sugar and spices in a small bowl. Pour butter mixture over the cereal and stir until coated.
Spray a 9 by 13 cake pan with non-stick spray. Spread the cereal mixture evenly in pan. Bake 50 minutes and stir every 10 minutes. Stir in the cranberries and allow to cool in pan on a wire rack, uncovered, until crisp. Stir occasionally to break pieces apart. Store in airtight containers.
