Kwixland Cookbook December 14th



RECIPES FROM THE KWIXLAND COOKBOOK SHOW

(December 14th)...

"Rosie's Cinnamon-Chocolate Chip Cookies"

1/2 cup brown sugar
1/2 cup white sugar
3/4 cup margarine or shortening
add:
2 eggs
1 tsp cinnamon
1 tsp vanilla
1 cup milk chocolate chips, mixed with 2 and 1/2 cups flour
1 tsp baking soda
2 tsp milk
drop by teaspoonfuls onto a greased cookie sheet; bake at 350 until lightly brown.

NOTE: dough should be slightly stiff, but if it appears dry and crumbly add more milk, 1 tsp at a time, until dough sticks together....can soften margarine in the microwave to help speed the mixing of it and the sugars.....raisins can be used instead of chocolate chips...you can add your favorite chopped nuts to the chips and flour mixture for a different taste.

"Hot Chicken Dip"

2 cups of shredded cheddar cheese
4, 8 oz packages of cream cheese
24 oz sour cream
3 packages of dry ranch dressing
2 cans (9.75 oz) chicken breast
mix together,
 and, put in a 9 x 13 pan
Top with more 2 cups of cheese.
Cover with aluminum foil and cook at 350 for 30 minutes.
Remove foil and cook 10 more minutes.

"No Bake Cookies" (with oats)

2 cups sugar
4 tbsp of cocoa
1 stick of oleo
1/2 cup of milk
pinch of salt
Put in a sauce pan stirring constantly until a rolling boil; remove from heat and add..
1 tsp vanilla
3 cups quick cook oats, uncooked
1 cup coconut
1/2 cup of nuts
Drop on wax paper by teaspoonfuls; no baking.
Makes about 3 or 4 dozen.

"Lemon Krinkles"

lemon cake mix
2 eggs
8 oz carton of cool whip
beat 2 eggs in a mixer, add cool whip, add the cake mix, beat until well mixed....will be thick

Drop by teaspoons into a bowl of powdered sugar and roll each into a ball.
Bake on a greased cookie sheet, at 350, 12 minutes...don't overbake.

"Apricot Balls"

1 and 1/2 cups dried apricots
2 cups coconut
2/3 cup Eagle Brand Milk
Grind apricots real fine, mix the coconuts, apricots and milk, shape into balls, and roll in powdered sugar
Keep cool.

 3 1/2 CUPS

have a grandson allergic to eggs...wants to make cookies...substitute for eggs

recipe for dummy fudge?? (chocolate chips instead of cocoa)

can you substitute pureed squash or pumpkin instead of applesauce, when sub for oil in a cake
